Slow cooked brisket in a tomato sauce.
In a pan heat olive oil and add chunks of onions, carrot and capsicum and saute for a few mins. Add a few cloves of garlic and continue to saute for another 5 minutes. Add in a time of chopped tomatoes, a teaspoon each of thyme and rosemary and salt to taste. Add a dash of water and bring to a simmer. Move to a slow cooker and add the brisket. Slow cook on high for 8 hours. After the 8 hours remove the brisket from the slow cooker, transfer the sauce to a pot and simmer to thicken the sauce. Slice the brisket, serve on a bed of mashed potatoes, and topped with the sauce and veggies. Delicious!
