Roast a chicken this Sunday. Very easy to do.
1. Start with a raw chicken and using paper towel ensure the outside is dry.
2. Take half a lemon cut into quarters and with a handful of fresh parsley stuff into the chicken cavity.
3. Coat the chicken in olive oil and then top with salt, paprika and oregano (these do tend to burn towards the end but the flavour is unaffected IMO)
4. Add some largely chopped vegetables around the base. I used carrot and potatoes with 1 onion and 2 cloves garlic. Can use what you want really as long as you cut them quite chunky. Also add 2 cups of water to the pan. Finally drizzle olive oil and sprinkle salt over the veggies.
5. Place into a pre heated oven at 200 degrees and set timer for 40 mins. At the 40 minute mark turn veggies over and baste the chicken with the water/juices in the bottom of the pan
6. Cook for another 30 mins and check the chicken. You know a chicken is cooked when you open the joint of the leg to the body and the juices run clear – see saved insta story. If still pink return to the oven for another 10 mins or till done.
7. Serve with a nice side salad for a Sunday dinner! The juices remaining can be poured over the top and also used in a soup or risotto, dont throw it out. .
