Mac and cheese meat free Monday, healthy serve style. Substituting bechamel sauce with smooth ricotta and adding some veg. This recipe comes in at about 580 calories. For 1 serve you will need:
– 1/2 carrot
– 1/2 zucchini
– 90g macaroni
– 1 tablespoon fresh ricotta
– 40g light tasty cheese
– 1 tablespoon parmesan cheese
– 1 to 2 tablespoons bread crumbs
– Salt to taste
Chop carrot and zucchini and bring to a simmer in a pot of water. Simmer until carrot is soft. Drain and use a fork to mash them up, then set aside. Meanwhile cook the macaroni according to packet instructions. Add cooked macaroni to mashed vegetables and add the cheeses. Mix together well. Taste and add salt if desired. Add pasta mix to a small baking dish and sprinkle with breadcrumbs. Bake in a 180 degree C oven for about 10 to 15 mins or till golden. Voila. .
