I think a lot of us are scarred from beans and lentils from when we were kids. I’m changing my mind. Here I sauteed garlic with carrot, tomato, zucchini and capsicum for about 10 mins then added 1/2 a tin of cannellini beans and a decent dash of water. Added extra flavour by adding salt, oregano and rosemary. Let that simmer away till all the water is gone and served with lamb cutlets. Give it a try.
