I love hokkien noodles, and I love the honey and soy combination. Here is honey and soy chicken noodles. This recipe is about 470 calories per serve. For 2 serves you will need:

1 tablespoon olive oil
1 chicken breast cut into small chunks
2 cloves garlic finely chopped
1 tablespoon crushed ginger
4 spring onions finely chopped
1 carrot finely diced
1/2 red capsicum finely sliced
200g Hokkien noodles
2 bunches bok choy or other Asian greens coarsely chopped
4 tablespoons soy sauce
2 to 3 tablespoons honey
Sesame seeds, more spring onion and coriander to garnish

In a wok, heat up the oil and add the chicken. Stir fry that till the chicken is cooked and remove from the wok and set aside. Go in with the spring onion, ginger and garlic and stir fry for a minute or two or till its amazingly fragrant, then go in with the carrot and capsicum. Stir fry that for about 5 minutes or so. If the wok gets dry add a dash of water. Then go in with the noodles and stir fry for 2 minutes, and then go in with the bok choy. Let that go for another few minutes stirring occasionally, then go in with the soy and honey and stir that through. By now the bok choy should be wilted, noodles nice and soft and you are ready to serve. Garnish if you like with sesame seeds, spring onion and coriander.
