Here’s how I do fish and chips. So good with coleslaw and home made tartar sauce! This comes in at about 580 calories and for 1 serve you will need:
– 1 medium potato cut into 8 wedges
– 1 fillet white fish, cod or barramundi
– 1 tablespoon plain flour
– 1 egg
– 2 tablespoons breadcrumbs
– 2 tablespoons olive oil
– 1/2 cup chopped cabbage
– 1/2 small carrot, grated
– 1/2 small cucumber, grated
– 4 teaspoons Greek yoghurt
– 1 lemon
– 1 teaspoon mustard
– 1 teaspoon mayonnaise
– 1 teaspoon capers
– 1 gherkin
– 1 teaspoon dill, fresh or dry
Firstly, placed chopped potato in a small pot with water and place on the heat to bring to a simmer. Simmer till potato is 3/4 cooked, not too soft, but you can insert a knife in quite easily. Drain. Meanwhile, place flour, beaten egg and breadcrumbs into 3 separate plates. Coat fish in flour, then egg, and then breadcrumbs. Place onto a lined baking tray with drained potato, sprinkle with olive oil and salt to taste and bake at 180 degrees C for 25 minutes or so depending on the thickness of your fish. Whilst that is cooking, for the coleslaw, add cabbage, carrot and cucumber to a bowl with mustard, 2 teaspoons of the yoghurt and juice of half a lemon. Mix well and set aside. Then in a small bowl to make the tartar sauce, add finely chopped capers, gherkin, dill, mayonnaise, juice of half a lemon and remaining yoghurt. Mix well. If you could make this in advance for the flavours to develop all the better. Serve all elements together!
