It’s almost October!! Although this year passed by in the blink of an eye, I couldn’t be happier for fall. I love hot drinks, oversized sweaters, warm spices, and all the good stuff fall brings. Hopefully it’ll bring better times for everyone.

These apple blondies are perfectly sweet, fudgy, and full of the warmest spices. I like to have my slice soaked in warm almond milk and topped with a drizzle of honey. The walnuts give it the best crunch, you won’t be able to stop at just one 🍎

-1/2 cup oats
-1 cup wholewheat flour
-2 apples
-1/2 cup milk of choice
-1 1/2 tbsp coconut oil
-3-4 tbsp honey or liquid sweetener
-1 tsp vanilla extract
-1 tsp baking powder
-1/2 tsp baking soda
-1 tsp cinnamon
-1/2 tsp ground cloves
-1/2 tsp nutmeg
-pinch of sea salt

🍎for the topping🍎
-1/2 cup crushed walnuts
-1 tsp coconut oil
-1 tsp honey
-1/2 tsp cinnamon

-preheat oven to 160C
-start by peeling the apples and chop 1/2 an apple into small cubes, and the other 1 and 1/2 into larger cubes
-put the larger cubes of apple into a pot with 1/4 cup of water, bring to a boil, and cover on medium heat for 7-10 minutes (or until apples are soft), then blend into purée and let cool completely
-in a bowl, mix the wholewheat flour, oats, baking powder, baking soda, cinnamon, nutmeg, cloves and sea salt
-in another bowl, mix the apple purée, milk of choice, vanilla, coconut oil, and honey or liquid sweetener
-gradually add the dry ingredients to wet ingredients
-fold in the chopped apple and transfer to baking pan
-mix the topping ingredients together and sprinkle on top
-bake for 20-23 minutes
