Εύκολες συνταγές

Είχα ένα μικρό διάλειμμα, αλλά επέστρεψα με λίγη παρουσίαση της Δευτέρας χωρίς κρέας, μια κολοκύθα και κομψή…

Had a little break but back with some meat free Monday inspo, a pumpkin and chickpea curry, perfect for a cooler winter’s day. This recipe is for 2 and comes in at just under 500 calories per serve. You will need:

1 κουταλιά της σούπας ελαιόλαδο
1 small onion finely diced
2 σκελίδες σκόρδο ψιλοκομμένες
1 teaspoon ginger paste or crushed ginger
A decent pinch each of cumin, tumeric, coriander and chilli powder
2 cups chopped pumpkin – i prefer butternut – its sweeter
1 κύβο ζωμό λαχανικών
3/4 tin of lite coconut milk
Αλάτι για γεύση
1 small tin of chick peas or 125g
Rice to serve
Parsley or coriander to garnish

In a pot, add the oil and heat through on medium heat. Add onions, garlic and ginger and saute for about 5 mins, then add the spices. Saute for a further 2 to 3 minutes so they toast a little and smell fragrant, then add the pumpkin. Continue for another few minutes or until the pumpkin just starts to colour, then add the coconut milk, vegetable stock cube and salt to taste. Let that simmer for about 20 minutes or till the pumpkin is soft. Meanwhile prepare rice as per packet instructions. After the 20 minutes add the chickpeas and cook for a further 5 minutes. You are done. Serve with the rice and garnished with the herbs. If you want some proper chilli, add some freshly chopped chilli with the onions.
