Εύκολες συνταγές

Ένιωσα σαν Μεξικανός απόψε, οπότε ορίστε τα enchiladas μου. Αυτή η συνταγή είναι περίπου 400 περίπου…

Felt like Mexican tonight so here are my enchiladas. This recipe is about 400 calories for one enchilada. You will need for 2 to 3 serves:

1 κουταλιά της σούπας ελαιόλαδο
1 στήθος κοτόπουλου κομμένο σε μικρά κομμάτια
Cumin, oregano, coriander and paprika spices (you can use Mexican seasoning as an alternative)
1 small red onion finely chopped
2 σκελίδες σκόρδο ψιλοκομμένες
½ green capsicum cut into thin strips
1 tin crushed tomatoes

3 tortillas
Shredded mozarella or cheddar cheese

Firstly coat the chicken in the spices, just a light sprinkle. In a pan, heat the olive oil through on a medium heat and add the chicken. Cook the chicken stirring occasionally for about 5 minutes or till cooked. Remove from the pan and set aside. Add the onions and garlic and saute for a few minutes and then add the capsicum. Continue to cook for about 5 minutes or till the capsicum starts to get some colour then add the tin of tomatoes and about half the tin of water. Add salt to taste and also a decent pinch of all the spices used previously. Let that simmer for about 20 minutes or till the sauce thickens. Add the chicken and cook for a further 5 minutes then its ready for assembly. Add a little sauce to the base of a baking dish so the enchiladas don’t stick on the bottom when baking. Now place some of the chicken and the capsicum along the middle of a tortilla and tightly roll it up. Place into the baking dish. Replace with remaining tortillas and filling. There should be a decent amount of sauce left in the pan, pour this over the top of the rolled tortillas. Sprinkle with the cheese and bake for 10 to 15 minutes or till cheese is melted and gooey. Serve with whatever you want, avocado, sour cream, pico de gallo etc.
