🍪crumbly chocolate-dipped cookie thins🍪
I’m the type of person that tends to have smaller meals and then snack throughout the day. So, I like having healthy homemade snacks that I can grab whenever I’m in the mood. I’ve been trying to avoid store-bought snacks as much as possible since they always contain added sugars, preservatives, and unwanted chemicals.
These cookies are super quick and easy to make, full of ingredients that are PACKED with nutrients, and are absolutely delicious.
What’s your favorite healthy snack?
-1 cup semolina
-1/2 cup oat or wholewheat flour
-1/2 cup ground raw almonds
-3 κουταλιές της σούπας ελαιόλαδο

-3-4 κουταλιές της σούπας μέλι
-1/2 κουταλάκι του γλυκού μαγειρική σόδα
-1 tbsp sesame seeds
-1 κουταλιά της σούπας σπόρους nigella
- πρέζα θαλασσινό αλάτι
-dark chocolate (i used 78%)
*optional: 1/2 tsp ground cloves and 1/2 tsp ground anise
-start by mixing the flour, semolina, ground almonds, baking soda, sesame and nigella seeds, baking soda, and salt (and anise + cloves if using)
-add the olive oil, honey, and water; knead by hand until you get a firm dough (should not be sticky) which is very easy to work with
-preheat your oven to 170C
-using a rolling pin, roll out the dough as thin as you like (mine were as thin as possible) and use a glass or cookie cutter to cut them out
-bake for 8-12 minutes or until slightly golden
-let cool completely before melting your dark chocolate in a bowl and dipping each cookie in; then placing them on a baking sheet so the chocolate doesn’t stick
-refrigerate for the chocolate to harden faster
