you’d be surprised at how many people DON’T consume enough greens and veggies in their diet. vegetables will add fiber, vitamins, and minerals to your meals, and a balanced, colorful diet will be your key to living a happy, healthy life. they support a healthy heart and digestive system, help maintain a healthy gut, and can reduce risks of chronic diseases.

1-prep your veggies for the week as soon as you’re back from the grocery store. wash, chop, and store them accordingly to make salad-making a 5-minute ordeal. a little extra work on one day will save you TONS of time during the rest of the week.

2-add them into breakfast. a side of cherry tomatoes with your eggs, some grated zucchini in your oatmeal, frozen cauliflower in your smoothies, don’t be afraid to get creative and try new things.

3-soup, soup, soup! you can pack a huge variety of veggies into homemade soups with almost no effort. bonus points if you make a homemade veggie stock.

4-add veggies into your favorite dishes. some things i usually do: add grated carrots, peas, or green beans to rice, blend some roasted veggies into pasta sauce, make a grilled veggie sandwich. this is a great hack if you’re not a huge fan of veggies as a side, because you won’t be able to feel them.

5-go to your local farmers market. one thing that encourages me to try new vegetables is to actually see all the beautiful, fresh, local produce. it’s also much cheaper than shopping at grocery stores, so your tummy and wallet both win.
